
Most operators replace a kitchen suppression system at the worst possible moment, which is after a failed inspection or a discharge, when the kitchen is already closed and the decision is being made under pressure. The better time is a year or two earlier, when the signs are visible and the work can be scheduled around the business rather than around a shutdown. Knowing what actually ends a system’s usable life makes that possible, and it is a different question from whether any individual part on the kitchen fire suppression system is broken.

The change came about because cooking media shifted toward vegetable-based oils that burn hotter and behave differently, and dry chemical agents proved inadequate against them.
The practical consequence is blunt. If your kitchen is protected by a pre-standard dry chemical system, it is not compliant no matter how well it has been maintained, and no amount of service brings it into compliance. That system is a replacement, and the only question is whether it happens on your schedule or an inspector’s.

Recharge after a discharge is a repair, not a replacement, provided the system was compliant before it fired. The cylinder is recharged, links replaced, interlocks reset and tested.

Treat recurring deficiencies as a budget signal rather than a maintenance nuisance. When the same findings appear twice, start planning.
Coordinate with other work. If a remodel, a hood replacement, or an equipment change is coming, doing suppression at the same time avoids paying for the same disruption twice.
Keep the documentation together, since design drawings, service records, and inspection reports are what establish the system’s history when a decision or a claim depends on it. Regular semiannual inspections are where most of that record is generated.
